Our caramel is handmade the old-fashioned way- stirred for 45 minutes on the stove. We use organic cream in it which gives it an richer flavor, and Monterey Bay Sea Salt to bring the flavor out. This caramel is our own recipe- not found in any book anywhere- and we spent 7 years adjusting the recipe and method to get it where we like it as we constantly seek to improve our confections.
